Happenings in the Kitchen

After a very successful event last night, there have been a few changes to the specials that the kitchen will be offering you tonight.  Pork posole has replaced the short rib stew.  Posole is a Mexican pork stew that is slightly spicy and contains hominy which gives the broth a nice tortilla-like flavor.  Unfortunately, we are all out of dessert tonight as the Oreo cookie cheesecake was quite a hit.  We are adding a few more specials to the board however that have been very well accepted by our lunch crowd today.  First, Big Dan went to the local Asian market and got ingredients for a killer shrimp pad thai.  For those of you that have not had pad thai, it is a dish of rice noodles that are cooked in a spicy sauce with tamarind and fish sauce and sauteed with garlic, Asian chilies, peanuts, bean sprouts, scallions, and scallions.  As you can tell we are kind of on a spicy kick in the kitchen right now.  Not to be left out of the trend is our second addition; hickory smoked jalapeno peppers stuffed with cheddar and pork roll and wrapped in bacon served with ranch dressing.  I assure you that these little fire balls are worth a try.  One customer at lunch today had an order and left with two more orders to-go.
